The Honours – Edinburgh opened in 2011 and represented the exciting next step of Martin Wishart’s journey. His aim was to further strengthen Scotland’s reputation for good food and to inspire others with his unequivocal enthusiasm for the very best traditional and modern French cuisine. Having launched the Michelin-starred Restaurant Martin Wishart in 1999 and Martin Wishart at Loch Lomond in Cameron House Hotel in 2008, The Honours was received with great acclaim and a sister restaurant followed in Glasgow in 2014.
The restaurant’s name makes reference to the moment in Scottish history when Sir Walter Scott — who lived nearby — uncovered the Scottish Crown Jewels, also known as The Honours of Scotland.
In addition, the name owes a debt to a rare 18th century book, “the Honours of the Table”. In this celebrated volume, the author, Rev. Dr. John Trusler, advised the youth of the day on table etiquette, exclaiming that: “To do the honours of a table gracefully, is one of the outlines of a well-bred man…”.
Since opening his eponymous restaurant in Edinburgh’s Port of Leith in 1999, Martin Wishart has firmly established himself as one of the UK’s most highly respected chefs, currently holding one Michelin star, 4 AA rosettes and a score of 8/10 in the Good Food Guide. In addition, Martin won the title of AA Chefs’ chef of the year 2010-2011. Martin trained under such renowned chefs as Albert Roux, Michel Roux Jr, Marco Pierre White, Nick Nairn, John Burton-Race, Marc Meneau and Charlie Trotter.
The Head Chef, Paul Tamburrini, has known Martin for over 12 years, since the two met in the kitchen of Edinburgh’s Balmoral Hotel in 1998. Paul’s extensive experience includes stints at some of the UK’s most renowned Michelin starred restaurants, such as Marco Pierre White’s L’Escargot Restaurant London, Airds Hotel in Argyll as well as Martin Wishart’s fine dining restaurant in Leith, Edinburgh.
Martin and Paul spent a great deal of time researching the perfect balance of ambience, design and style for The Honours – Edinburgh, drawing inspiration from many successful restaurants around the world. Together, they have crafted a unique menu utilising the trusted artisan producers and suppliers. The menu at The Honours – Edinburgh combines seasonal, Scottish flavours in innovative, brasserie-influenced dishes. The team have compiled a concise, but varied wine list with the aim of offering the majority of the selection by the glass.
