Executive Chef Tony Sarton demonstrates culinary flair with an inventive and eclectic menu that keeps apace with the seasons, using a wide range of Scottish produce and only the finest locally sourced ingredients.
It’s not surprising that Tony claimed the coveted title of ‘Chef of the Year’ at the 2015 Scottish Hotel Awards as he likes to push boundaries and add a little theatre and fun – Scottish brown crab is artfully deconstructed as tea and toast: the shell turned into a pot of strong, sea-salty broth, the brown meat into delicate mousse & the white into a creamy, refreshing parfait to spread on a tiny bread loaf and a glass cloche is lifted to reveal a puff of hickory smoke, presenting a tender, blood-red Border beef carpaccio, soft-boiled quails’ eggs, pickled walnuts and crunchy baby onion rings! Traditional dishes also shine with a well-seasoned, succulent ribeye steak seared to 450˚C in the much-vaunted charcoal-fuelled Josper grill and oven, while a sublime seafood box of half lobster with scallops, mussels, cockles and fresh, sweet langoustine is amazing value.
Twenty’s signature dishes include Seared West Coast scallops & medallions of lobster with apple consommé & vanilla; Buccleuch black pudding & pork belly roll with apple purée & sage oil; Twenty Burger, a 7oz chuck steak burger with crispy bacon, smoked mayonnaise and Innis & Gunn rarebit, served with triple-cooked chips and salad leaves; Chipotle & maple-glazed Secreto de Iberico pork, piquillo pepper gnocchi and green beans; Salt & rosemary-baked seabass with pickled spring vegetable & warm potato salad, lemon & chervil butter; ‘Fire & Ice’ Banoffee Baked Alaska – Flaming rum, caramelised banana, toffee & vanilla ice cream, sponge & toasted meringue.
